Chicken Spaghetti (didn’t have it last week), Salad
Smoked Pork Chops, Pinto Beans, Squash, Corn Bread
Lunch: Leftovers, Sandwiches, Chicken Nuggets, Fruit/Carrot Sticks
YUM!We almost ran out of fruit this week. Evidently I just didn’t pick up enough last week, so today I got plenty: peaches, pears, bananas, apples and blueberries.
Last week, like I said, we didn’t get to the chicken spaghetti. We had the chicken salad two nights in a row (plus lunches!). I also didn’t make the teriyaki drumsticks. I did cook them though. I actually cooked them in the crock pot (3 hours on high) with a little butter after marinating them in wing sauce and some spices. Then, after church, I basted them and put them under the broiler to get crispy. They turned out pretty good. R ate 3 of them so I felt like that was a good sign! The Parmesan Basil Chicken Salad was pretty good. I made it almost exactly like the recipe but I added some almonds . R liked it but said it needed something sweet, like grapes. The Basil Dill Coleslaw was ok … different but ok. The basil didn’t bother me.. I think it was the dill??
I’ve only got 4 meals planned this week because we are having a birthday dinner for Luke (who is turning TWO this week!!!!) Friday. I haven’t planned out that meal yet but more than likely it will consist of his favorite things: chicken nuggets and french fries! I’m planning on making some cupcakes too!
